These are my tried and true recipes for anyone that is interested. I am a busy mom of three, and a full time student, so I dont have a lot of time to waste in making a lot of things. Matthew's Favorite Carrot Salad...

You cant have an Easter dinner without Carrots!!!
  • 1 lb carrots shredded (raw)
  • Mayonnaise (1/2-1 cup depending on how creamy you like it)
  • 1 tsp vinegar
  • 1/4 cup sugar
  • 1/2 cup mini marshmallows
  • Options:
  • 1/4 cup Raisins

or

  • 1/2 cup pineapple tidbits
Combine all ingredients together. Mix well, refrigerate for 1 hour before eating.

Stuffing...Dressing...


This makes a lot of stuffing. If you are making it for a regular meal, cut this recipe into thirds. I make this much for the holidays, so this is what we are having for Easter dinner...




3 boxes of seasoned croutons
1 box of Swanson Chicken Broth
1 box of fresh mushrooms (chopped)
1 large onion (2 medium) diced
1-2 chicken breast (or turkey breast) coked and diced
Add all ingredients and bake on 350 until done (an hour or so). It will begin to brown on top. I usually cook it with the lid on it for most of the time and then uncover it for the last 15 minutes.

Delicious Pineapple Yams...


HOPPY EASTER!!!

  • 6-8 Medium Yams
  • Splenda Brown Sugar
  • I Can't Believe It's Not Butter
  • 1 Can Pineapple Tidbits (undrained)

Boil yams with skin on until they are cooked all through.

Peal the yams when they are cooled, slice up into chunks.

Put butter in with yams, 1/2 of the pineapple juice (add more if needed but you dont want it too soupy) and mash with a masher or blend until smooth with a mixer (dont over blend them!)

Add brown sugar (to taste).

Add pineapple tidbits.

Heat and eat!!!
